Apple Cookies

This time I added a little starch to my regular apple cookie recipe and it turned out a very soft and delicious cookie.

10 tbs 150g  (5.3oz)  butter

1/2 cup (100 gr) yoghurt

1 cup powdered sugar

1/2 cup (100 gr) oil

1/2 cup starch

1 teaspoon vanilla extract

1 tea spoon baking powder

3.5 cups flour

Filling

5 apples

1 teaspoon ground cinnamon

1/2 cup sugar

1 teaspoon vanilla sugar

1/2 cup ground almonds

Grate the apples, and cook them in a pot in 1 teacup sugar. Add the cinnamon and almonds and let cool.

Add all ingredients one at a time, blend in the flour and baking powder after sifting, and then knead until it forms soft dough.

Shape dough into 1 inch pieces and using a knife draw a line starting from the middle of the dough, roll the dough into a moon shaped cut and put onto baking sheets. Bake in the preheated oven at 180ºC  ( 356ºF )  and remove before the top is brown. Cool completely and dust with powdered sugar.
